- Paneer – 250 grams
- Boiled potatoes – 2 (medium size)
- Cornflour – 2 tablespoons
- Salt – according to taste
- Cashews and raisins – 1/4 cup (for stuffing)
- Red chili powder – 1/2 teaspoon
- Garam masala – 1/4 teaspoon
- Oil – for frying
For gravy:
- Tomatoes – 4 (make puree)
- Onion – 2 (finely chopped)
- Ginger-garlic paste – 1 teaspoon
- Green chili – 2 (finely chopped)
- Coriander powder – 1 teaspoon
- Turmeric powder – 1/2 teaspoon
- Red chili powder – 1 teaspoon
- Garam masala – 1/2 tsp
- Cream – 1/4 cup
- Oil – 3 tbsp
- Salt – as per taste
- Fresh coriander leaves for garnishing
Method of making Paneer Kofta
- Preparing the koftas
- Grate the paneer in a large vessel and mash the boiled potatoes in it.
- Prepare a smooth mixture by adding cornflour, salt, red chili powder and garam masala to it.
- Make small balls of this mixture and fill 1-2 pieces of cashew and raisin in each ball and make round shaped koftas.
- Now heat oil in a pan and deep fry these koftas till they turn golden brown. Take them out on tissue paper and let the excess oil absorb.
- Preparing the gravy
- Heat oil in a pan and add finely chopped onion and fry till golden brown.
- Now add ginger-garlic paste and green chillies and saute for 1-2 minutes.
- Add tomato puree and cook well with spices (coriander powder, turmeric powder, red chilli powder) till the oil separates from the gravy.
- Add half a cup of water to the gravy and bring it to a boil. After this, add cream and cook for another minute.
- Finally, add garam masala and salt and let the gravy cook on low flame till it thickens.
- Adding koftas to the gravy
- When the gravy is ready, turn off the gas.
- Add koftas to the gravy just before serving so that they do not break.
- Garnish with fresh coriander leaves.
