Ingredients for Shakkarpare
- Maida (white flour) – 2 cups
- Ghee – ¼ cup (for kneading)
- Sugar – 1 cup
- Water – ½ cup (for syrup)
- Oil – for frying
- Fennel seeds – 1 tsp (optional)
- Salt – a pinch (for flavour balance)
How to make ShakkarpareRecipe
Step 1: Knead the dough
- Firstly, take the maida in a large bowl. Add ¼ cup ghee for kneading.
- Now add a pinch of salt and if you like a mild flavour of fennel, then add 1 tsp fennel seeds.
- Slowly mix the ghee and maida with your hands. Make sure that when you press a little maida in your fist, it does not scatter but binds.
- Now add water little by little and make a stiff dough. Keep the dough covered for 15-20 minutes so that it sets.
Step 2: Shaping the Shakarpare
- Lightly knead the set dough again with your hands.
- Now make small balls of the dough and roll them like a tthick roti with the help of a rolling pin.
- Cut this rolled roti into square or diamond shapes with a knife. You can make big or small pieces as per your choice.
Step 3: Frying Process
- Heat oil in a pan. Keep in mind that the oil should be heated on medium flame so that the shakarpare becomes crispy well.
- Slowly add the cut dough pieces to the hot oil.
- Fry them on medium flame so that they get cooked well from inside and become golden and crispy from outside.
- After frying all the shakarpare, take them out in a plate and let them cool.
Step 4: Make Sugar Syrup
- Now add 1 cup sugar and ½ cup water in a pan and prepare the syrup.
- Cook the syrup till it reaches a single string consistency. You can check it by pulling it between your fingers – if it forms a string, it means the syrup is ready.
- Add the fried shakkarpare to the prepared syrup and mix well so that every piece gets coated well with the syrup.
- Leave the shakkarpare open for some time so that the syrup dries and solidifies on them.

- Oil Temperature: While frying shakkarpare, the oil should neither be too cold nor too hot, else they will not get crispy properly.
- Take care of the syrup: If the syrup becomes too thick, the shakkarpare will not be coated properly, and in thin syrup they may become soft. Therefore, one-string syrup is best.
