Cucumber and Tomato Raita

Material

  • 2 cups curd
  • 1 cup cucumber (chopped)
  • 1 cup tomatoes (chopped)
  • 1 tsp cumin powder
  • Salt and pepper to taste

Method

  • First of all, beat the curd well in a bowl.
  • Now chop cucumber and tomato and add it in it.
  • Add cumin powder, salt and black pepper to it and mix well.
  • Your cucumber tomato raita is ready. Serve it with food.

Bathua Raita

Material

  • 2 cups fresh bathua (chopped)
  • 2 cups fresh curd
  • 1 tsp cumin powder
  • 1/2 teaspoon black pepper powder
  • 1/4 tsp black salt
  • 1/2 teaspoon lemon juice
  • 1/4 tsp hing (asafoetida)
  • 1 inch ginger (grated)
  • 1 tsp cumin seeds (for tempering)
  • Fresh coriander leaves for garnish

Method

  • First of all, wash and clean the bathua leaves thoroughly. Now add some water to the bathua leaves in a pan and boil or steam them lightly.
  • When the leaves become soft, leave them to cool. Then mash them well.
  • Now add fresh curd in a large bowl and whisk it well.
  • Add chopped bathua, black pepper powder, cumin powder, black salt and grated ginger to it.
  • Add lemon juice to it and mix it well.
  • For tempering, heat 1/2 teaspoon ghee or oil in a small pan. Add cumin seeds and asafoetida and let them crackle. Pour the tempering into the raita. Garnish it with green coriander and serve with rice or roti.

Beetroot Raita

Material

  • 2 cups fresh curd
  • 1 cup grated beetroot
  • 1/2 tsp cumin powder
  • 1/4 tsp black pepper powder
  • 1/4 tsp black salt
  • 1/2 teaspoon lemon juice
  • Fresh coriander leaves (for garnish)

Method

  • First of all, wash and peel the beetroot thoroughly and then grate it.
  • If you want, you can boil it and then grate it. Now beat the curd well in a bowl.
  • Now add grated beetroot to it.
  • Add cumin powder, black pepper, black salt and mix well.
  • Now add lemon juice to it and mix it well.
  • Garnish with green coriander and serve with roti, paratha or pulao.
